Flow of evening:

  1. Welcome the couples and introduce cook and servers (who remain and participate for the opening prayer).
  2. Explain how the evening will unfold, e.g.: 
    "We will serve a set of questions with each course.  At the end we will serve a closing prayer for you to either pray together at the table once you are done eating, or when you reach home.  You're welcome to stay as long as you wish.  We will not formally close the evening."
  3. Opening prayer and lighting of the candle at each table.  (The prayer service is designed for 11 tables - if you have more, light two or three candles at once.)
  4. Staff returns to the kitchen and the bourses begin to be served... after the food is brought out, a file card with the discussion question is sent to each table.
  5. Throughout the meal, the servers clean up the used dishes, bring more water as needed, and bring out the new courses - allowing for comfortable space and time between each course.  It usually lasts 2 1/2 hours.
